This is my new most favorite salad dressing EVER! I LOVE it!!! I CRAVE it!!! Sweet and spicy and goes so well with mixed greens, goat cheese, apple, and almonds.
6 Tbsp red wine vinegar
1/3 cup olive oil
3 Tbsp red pepper jelly
1 shallot, minced
1 Tbsp coarse-grained mustard
1/4 tsp kosher salt
1/4 tsp pepper
Whisk all together. Makes about 1 cup.

This past weekend was supposed to be my fourth half marathon at Myrtle Beach. I’ve been training for a couple of months and everything was going good until I came down with the flu. It really wiped me out. I did no workout of any kind for 2 weeks straight and then the week before the race I was still very tired. But we had already made plans to go camping at the beach as a bonus for my race. We headed out last Friday night and I decided to run the race as best I could. I picked up my bib on Saturday with every intention to still run. Then during the night my youngest daughter woke me up vomiting and my older daughter had hives! I still woke up at 5 am to see how they felt before making a final decision. I finally came to the conclusion that maybe this race just wasn’t meant to be. I felt I should be a good mommy first and there will be other races. It’s hard to admit defeat! But as I walked on the beach with my family looking for shells, instead of running in the race, I thanked God for that time and those memories.
My next race is the sprint Tri in September, I think. Wow! Lots of time to get ready. Some of my old running pals in NJ asked me to do the Philly marathon with them in November. At first I said no right off the bat, but now I’m giving it more consideration. It would be so nice to run with some of them again!
