Can I just start this post out by saying how proud of myself I am??? This weekend we went camping with a bunch of my family. I didn’t want to show up with no plan, so before we left, I wrote out how many meals I would be eating while we were gone, and I mad a menu and prepped/cooked all my meals before I left. AND I STUCK TO IT. Even with all the yummy s’mores, beer, wine, chips, pancakes, etc being handed out. I brought with me, leftover egg foo yung, grilled chicken, avocado dressing and sweet potatoes, homemade sausage, tomatoes, cherries, grapes, more grilled chicken, pesto and cauliflower rice. A few people were interested in what I was doing and seemed like they might check into Whole 30. And everyone loved my sweet potatoes and couldn’t believe how easy they were to prepare. This weekend was definitely a challenge, and I feel like passed the test. I can honestly say I didn’t cheat one bit, nor do I feel cheated.
I would also like to add that I was so stressed about the food that I forgot to pack sunscreen, bug spray, warm clothes for the cool night weather, pj’s for my kids, etc…. Ah! What a bad mommy I was. Luckily there were other good mommies there.
I can’t believe tomorrow is Day 22!!! Whoo hoo!!
